Australia's oldest distillery, in operation since 1884, uses a cask still for distillation. This is a kind of pot still that is mainly used in Guyana. This Beenleigh Artisan Distillery has a new term coined by them; "Oceanian aging", a tropical aging but in Oceania itself (10 years Oceanian aging and 3 years continental).
Tasting notes :
• Nose : Fat and sweet with lots of juicy exotic fruit, vanilla and oak spices, slightly spicy notes of grass. After some airing, some light tones of paint thinner (acetone, acid, ...)
• Taste : Spicy entry, lots of chili-like pepper, cane sugar syrup, sweet rather than dry, oak spices, vanilla cream.
• Finish : bittersweet, bitter dark chocolate, beautiful herbs and long shelf life. Very well balanced overall and some fig sweetness at the very end.
