Don Papa Rye Aged Cask

The new Don Papa Rye Aged Rum has aged for four years in American rye casks at the foothills of Mount Kanlaon on the island of Negros, Philippines.

The resulting liquid is described as “vibrant and fruity” on the nose with spicy notes of cracked black pepper, salted caramel and a touch of fresh mint and cedarwood. The palate is “deep, intense and velvety” while the finish is delicate and smooth.

“Imagine a green, lush rye field on a beautiful Tennessee spring day merging with a warm tropical shower blowing in from the Philippine sea,” said Stephen Carroll, owner of Don Papa. “This is the backdrop for Don Papa Rye Aged Rum – combining the intense granular spice notes of American rye barrels and our very own black gold molasses rum, resulting in a beautifully balanced, silky smooth and complex new rum.”

Bottled at 45% ABV, the rum is said to celebrate the blending of the American and Philippine cultures.

The design for the new expression is inspired by the Prohibition era and reflects hidden speakeasies, the jungle landscape of Negros and the hero behind the Don Papa name.
