Millstone Special #23 Pedro Ximenez Cask - 7yo C.S (51.3%)

Immediately upon pouring it is clear, this is a dark, rich whisky. The whisky has the typical tones that you expect from a whisky that has matured for 7 years in an old PX sherry barrel. Despite the maturation in PX sherry casks, the first impression of the whisky is fresh rather than sweet, but if you give it a little time, the whiskey shows its true balanced and complex character. The unique qualities of this whisky come from the use of a crystal clear wort that ferments coolly and slowly before being quietly distilled with an early cut point at the end of the middle barrel. After distillation, this whiskey was fully matured in Pedro Ximinez sherry casks. The aging in these barrels gives the whiskey its beautiful color and enhances the elegant rich sweet tones and depth.
