The label this time features a school of beautiful dolphins. The 2007 rum was distilled in both a Pot and Column Still at the Demerara Distillers Ltd. distillery. A tropical ageing in Bourbon barrels took place during 13 years, followed by an additional 2 years of continental ageing in Ferrand barrels. The Guyana 2007 offers intense aromas of pastry with cocoa and almonds. Vanilla and lime zest come to the fore. On the palate, the rum first offers floral flavours. Then hints of orange, tobacco, sultanas, berries, almonds and hazelnut. The Guyana 2007 finishes with notes of molasses, leather and medicinal notes of ginseng. The finish is spicy with pepper, nutmeg, liquorice, cinnamon and chocolate.
