The production of the Plantation Rum Panama 2007 takes place from molasses and a three-day fermentation in the Alcoholes Del Istmo Distillery.
In Panama, this rum matures for 11 years in bourbon barrels, after which it matures for another 24 months in ex-cognac barrels made of French oak, in the cellars of Château de Bonbonnet/ Cognac. For the finish this rum matures for another 10 months in Syrah (Côte-rotie) barrels.
Syrah is a grape variety that was originally cultivated in the Rhone Valley (France). Outside Europe, the variety is known as "Shiraz".
Tasting notes:
Colour: Light amber.
Nose: Notes of blueberries, currants, pepper, plums, smoke.
Taste: Fruity, spicy, wine aromas, oranges, pepper.
Finish: Long lasting, nutmeg, cinnamon.
