The cachaça is aged in barrels that give the drink softness, coloring and flavor. The woods used by Engenho Dom Tápparo are: Amburana, Amendoim, Carvalho Americano, Carvalho Europeu and Jequitibá.
Amendoim and Jequitibá are Brazilian woods, European oak and American oak are imported woods.
Engenho Dom Tápparo's cachaças are kept in these barrels for a minimum period of 6 months before being bottled. The oldest cachaça sold by Engenho Dom Tápparo is Cachaça Cabaré, aged for 15 years in European oak barrels.
