Elizabeth Yard - Diamond Distillery Single Cask Rum 11YO (51.8%)

This rich and robust rum from Guyana’s Diamond distillery was finished in a Palo Cortado sherry quarter cask at Unit 9, located in the Royal Elizabeth Yard just outside Edinburgh. Acquired in 2021 by Holyrood distillery as a whisky warehouse, the old Royal Navy ration dispensary and storage is once again been used for rum.
This 10-year-old single-cask expression offers aromas of rich stone fruits, charred vanilla oak, toasted coconut and banana – joined on the palate by notes of dark chocolate.
