Redbreast 27YO Ruby Port Cask (55,9%)

The Redbreast 27 Year Old stands among the most prestigious releases from Redbreast. Produced at the renowned Midleton Distillery in County Cork, it demonstrates how the traditional single pot still style can evolve through very long maturation.

As with all Redbreast whiskeys, the mashbill combines malted and unmalted barley and is triple distilled in copper pot stills. This creates the rich and textured character that defines the style. For this bottling the whiskey matures for over 27 years in a combination of bourbon barrels, sherry casks and Ruby Port casks.

The Ruby Port casks add another layer of depth, bringing notes of dark fruit sweetness that complement the classic pot still spice.

The nose reveals aromas of dark cherries, figs and plums alongside honey, caramel and soft oak. On the palate the whiskey shows impressive complexity with flavours of red berries, dried fruit, dark chocolate and warming spices. As it develops in the glass, subtle oak and refined port sweetness appear.

The finish is long and elegant with lingering fruit, spice and gentle oak.
