With the Ardara Irish Single Malt 2025 Edition, the Ardara Distillery presents its very first official single malt from County Donegal, Ireland. This whisky serves as the calling card of a distillery that consciously harks back to the historical whiskey traditions of Northwest Ireland. In doing so, Ardara opts for a distinctive style in which peat smoke, character, and texture take center stage.
The whisky is made from heavily peated malt (55 ppm), triple distilled, and produced according to the rare “all grain in” principle, where the entire fermented mass is co-distilled. This method contributes to a richer structure and a remarkably full mouthfeel. Maturation takes place in a combination of Oloroso sherry casks, bourbon casks, and virgin oak, preceded by a unique period in Ardara's own Solera cask.
TASTING NOTES:
The result is a whisky that immediately stands out for its dark, earthy smoky style. Sweet notes of poached pears, coconut, raisins, and freshly baked pastry are supported by almond, leather, tobacco, and a layered smoke reminiscent of campfire, peat, and old chimney smoke rather than classic Islay influences. Behind the smoke lies a surprisingly fruity and creamy core that provides balance.
