Compagnie des Indes La Sirene Ex Ratafia Champenois Cask (43%)

The limited edition “La Sirène” is a refined blend of two aged rums. The first is a Cuban rum from 2009, which has aged for three years in barrels that previously held “ratafia champenois”. The second, from Paraguay, has aged for 7 years, followed by a second 12-month aging period in former French whisky barrels. The result is a complex and enchanting rum, with notes of beeswax, leather, and elderflower, enhanced by a hint of curry.
TASTING NOTE:
Nose: A nose that combines notes of old wood and beeswax, with lush accents of soft caramel and a subtle hint of spices reminiscent of curry, elevating the whole to a higher level.
Taste: An elegant opening in which roasted and floral nuances are interwoven, followed by notes of cherry and liquorice that provide complexity and a long finish.
