Elizabeth Yard Sherry Cask - Holyrood Blended Rum (42,5%)

Elizabeth Yard Sherry Cask Edition is a distinctive blended rum created by Holyrood Distillery in Edinburgh. The blend brings together rums sourced from several regions, including components from Ghana, Vietnam and the Philippines.

Both molasses-based rum and sugarcane juice rum are included in the blend. The distillation methods are equally diverse, incorporating pot still, column still and even a high-ester pot still component. This combination creates a layered and expressive character with fruity, spicy and slightly funky notes.

After blending, the rum is matured in sherry casks, which add depth and richness. Notes of dried fruit, raisins and caramel appear alongside hints of nuts, cocoa and gentle spice.

The result is a complex and well-balanced rum where tropical fruit, subtle fermentation character and the sweetness of the sherry casks come together.
