Clairin Sajous (55.2%) is an authentic, traditional Haitian clairin from Saint-Michel-de-l’Attalaye, north of Port-au-Prince. It is produced by Michel Sajous, who built his small distillery in the heart of his own sugarcane estate of around 30 hectares.
Several cane varieties are grown on the plantation, including the well-known “Cristal”. Farming is carried out in a natural and responsible way, allowing the local terroir to shine through. This rum is made from sugarcane juice, fermented through spontaneous fermentation, and distilled in a small pot still — the true clairin way: pure, vibrant and unapologetically characterful, bottled without filtration or additives.
In the glass, it shows exactly why clairin has gained cult status among rum lovers.
