The Kilchoman Maury Cask Matured is a release where cask influence plays a defining role. Rather than a finishing period, the whisky has been fully matured in casks that previously held Maury, a sweet fortified wine from the Roussillon region in southern France, typically made from Grenache noir grapes.
This approach gives the whisky a different character from the start. Instead of developing in traditional bourbon or sherry casks, it builds its profile entirely through Maury cask maturation.
Over time, the whisky develops layers of dates, raisins and dark honey sweetness, which integrate with Kilchoman’s signature peat smoke and citrus character.
The nose shows red fruit, dried fruit and wine-like richness alongside peat and spice. On the palate it is full and layered with berries, caramel and gentle spice, supported by warming peat smoke.
The finish is long and intense with fruit, smoke and lingering sweetness.
