The GlenAllachie 11 Years Palo Cortado Sherry Cask Matured is built around contrast and integration. Palo Cortado is a rare style of sherry, combining the dryness of Fino with the richer, nutty depth of Oloroso, and that dual character is clearly reflected in the whisky.

It opens with warming cinnamon and butterscotch, followed by ripe plums and soft honey. Layers of raisin, crystallised ginger and a subtle mocha note develop underneath, giving the whisky a fuller and more rounded presence without becoming heavy.

On the palate, it deepens further. Honeycomb and dark fruits such as brambles and plum are supported by baking spices and a pronounced sherry influence. Notes of maraschino cherry, chocolate and treacle add richness, while a gentle spice keeps everything in balance.

The finish is long and warming, with lingering dark fruit, soft spice and a persistent sherry character fading gradually.
