The Habitation Velier Rainforest 2024 is one of the most striking new releases within the Habitation Velier series. This rum comes from the young Rainforest Distillery in Bukidnon on the Philippine island of Mindanao, a distillery that focuses entirely on terroir, long fermentations, and a pure, artisanal production of sugarcane juice rum. The bottling marks an entirely new chapter in the world of Pure Single Rum.
For this vintage, only freshly pressed juice from the local Mampu sugarcane variety is used. Fermentation lasts 10 to 12 days and utilizes dunder and muck, which provides extra aromatic depth. Subsequently, the rum is distilled in a pot still and tropically aged for approximately twenty months in former Chardonnay barrels. Afterwards, it is bottled without additives, colorings, or cold filtration at a powerful 62% ABV . Only 1,500 bottles are available worldwide.
The aroma is fresh and pronounced, with notes of fresh sugarcane, ripe pear, pineapple, lime, and coconut, supported by floral accents, soft spices, and a subtle medicinal touch. On the palate, it is lively and energetic, with a mix of fruit, liquorice, olives, white pepper, and a light minerality. The Chardonnay barrels impart a refined structure without overpowering the sugarcane character. The finish is long, dry, and fresh, with citrus, tropical fruit, and an elegant spiciness.
